
So, I did something I’ve never ever done before.
I bought a Prime Rib to cook. A 3.75 lb., $70 piece of meat. 0-0
We’re celebrating paying off our house, so I can justify it just this once.
Heating the over to 500 degrees Fahrenheit. That’ll be a first, too. Wish me luck!
If I screw this up, I’m “Dead Meat”. 😉

BobbieZen Wait! I hope you are keeping the oven at 550° and making a $70 chunk of charcoal. Please tell me your plan is to drop it down to 325 and slow roast it until you get an internal temp of 138-140° then letting ii sit for 20 minutes before you slice it.

It’s a time method. 5 minutes per pound at 500*. So, 19 minutes, then turn the oven OFF, don’t open the door for 2 hours. Brett Lipton

We discussed taking a real vacation Europe, Hawaii, etc.
We decided we’ll just keep making the payments, to our savings account, for now. Retirement is on the horizon, and we want to build up the nest-egg for leaner days.

We’re grateful for a stable dual income that allowed us to get here, and for not buying into the bank’s loan officers telling us we could qualify for a loan double what we were comfortable with.

Fortunately, our insurance sends a yearly bill. Bill Abrams County also sends us a tax bill. Even my car insurance sends a monthly bill.
By the way, Scarlett Candee Metallica, (my mustang) is paid off in June. o/ I plan on keeping her around for a good long time.

He’s getting a new car this year come hell or high water. We’ve put 180,000 miles on the old Ford 500….it’s been a good car, but I’m looking forward to a Subaru Outback or maybe a Nissan Pathfinder. I have to be able to vacation on the Northern Barrier Islands, where the wild horses roam, and that requires 4 Wheel Drive!
